Comparative nutritional assessment of vegetarian and nonvegetarian ready-to-eat foods

Objective

This study aimed to assess the nutritional adequacy of vegetarian ready-to-eat convenience foods.
Methods
We examined 114 vegetarian and 414 nonvegetarian ready-to-eat products and compared their energy and nutrient contents to gain useful insights for consumers when making informed choices and for producers when developing nutritionally balanced vegetarian convenience foods.
Results
Compared with nonvegetarian products, vegetarian convenience foods had a significantly greater carbohydrate content per serving and significantly lower protein, sodium, and cholesterol contents. Although vegetarian gimbap was significantly more costly than the nonvegetarian gimbap, its cholesterol and saturated fat contents were significantly lower. Vegetarian rice balls had a significantly lower trans fat content than their nonvegetarian counterparts. Sandwiches in the vegetarian options had a significantly higher sugar content but had significantly lower protein and sodium contents than those in the nonvegetarian options. Vegetarian convenience foods did not meet one-third of the daily nutrient reference values for a single meal, similar to their nonvegetarian counterparts, but their sodium content exceeded the daily reference value. However, unlike the nonvegetarian options, the sodium content of vegetarian sandwiches did not exceed the daily value.
Conclusion
Vegetarian convenience foods contain higher levels of carbohydrates and sugars and lower levels of protein, sodium, and cholesterol than nonvegetarian convenience foods. Foods such as vegetarian gimbap, rice balls, and sandwiches do not provide sufficient energy or nutrients to meet the nutritional requirements for a single meal. Creating nutritionally balanced vegetarian convenience foods should be the focus when developing new vegetarian food products.

We investigated the association between fast-food (FF) consumptions and the risk of overweight/obesity and dyslipidemia in Korean adults (20–39 years) based on the Korea National Health and Nutrition Examination Survey (2013–2014). We also examined the effect of breakfast intake on the risk of overweight/obesity and dyslipidemia according to their frequencies of FF consumption. FF consumption was categorized into 3 groups: < 1 time/month (n = 79); 1–3 times/month (n = 1,173); and ≥ 1 time/week (n = 474). People consuming FF ≥ 1 time/week had unhealthy lifestyles, higher intake of total calorie, fat, and protein, and higher levels of blood pressure, total cholesterol (TC) and low-density lipoprotein (LDL)-cholesterol than those consuming FF < 1 time/month. Logistic regression analysis showed higher risk of overweight/obesity in people consuming FF 1–3 times/month (odds ratio [OR], 2.525; confidence intervals [CIs], 1.169–5.452; p = 0.018) and ≥ 1 time/week (OR, 2.646; CIs, 1.128–6.208; p = 0.025) than those consuming FF < 1 time/month after the adjustment. The risk of dyslipidemia was also higher in people consuming FF ≥ 1 time/week than those consuming FF < 1 time/month after the adjustment (OR, 2.444; CIs, 1.047–5.704; p = 0.039). Furthermore, among people consuming FF ≥ 1 time/week, irregular breakfast consumers (≤ 2 times/week, n = 215) had significantly higher levels of triglyceride, TC, and LDL-C than regular breakfast consumers (5–6 times/week, n=180). Irregular breakfast consumers also showed a higher risk of dyslipidemia than regular breakfast consumers after the adjustment (OR, 2.913; CIs, 1.463–5.801; p = 0.002). In conclusion, frequent FF consumption increases the risk of obesity and dyslipidemia in Korean adults aged 20–39 years. Particularly among the frequent FF consumers, irregular breakfast intake may contribute to the increased risk of dyslipidemia. It may provide an evidence for proper dietary education to reduce the risk of overweight/obesity and dyslipidemia in Koreans adults aged 20–39 years.

One Menu Please: Parents Want Affordable, Right-sized Portions for Their Children in Restaurants

One contributing factor to the obesity epidemic is the large portion sizes served in restaurants. However, no study has looked at the parents' desire for smaller-portioned meals for their children at restaurants in the U.S. This study examined parents' preference for restaurants to offer smaller, lower-priced child portions for their children and reasons for the preference. Multivariable logistic regression was used to estimate adjusted odds ratios (ORs) for the association between preference for child portions and variables on parental sociodemographic characteristics and weight status. About 70% of parents said they would prefer that restaurants offer smaller, lower-priced child portions of all menu offerings. The adjusted odds of preferring child portions were significantly higher among Hispanic parents (OR, 1.95 vs. non-Hispanic whites) but significantly lower among parents with lower education (≤ high school, OR, 0.64; some college, OR, 0.69 vs. college graduate) and parents residing in the Midwest or West (Midwest, OR, 0.61; West, OR, 0.58 vs. South). The most common reason for preferring child portions of all meals was “wanting my child to eat healthier foods that are not offered on the children's menu” (72%). These findings can be used to encourage restaurants and other venues to consider offering child portions of healthier menu items.
